Spicy Caramelized Onion Burgers

Ingredients
- 2 La Fournée Dorée Sesame Brioche Buns
- 2 beef patties (150–180 g each)
- 2 slices of cheddar cheese
- A few lettuce leaves
- 2–3 tomato slices (optional)
For the spicy caramelized onions
- 2 large yellow onions, thinly sliced
- 1 tbsp butter
- 1 tbsp olive oil
- 1 tbsp brown sugar
- ½ tsp smoked paprika
- ¼ to ½ tsp chili flakes (depending on desired spice level)
- A pinch of cayenne pepper (optional)
- Salt and pepper
- 1 tbsp balsamic vinegar
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp sriracha sauce
- ½ tsp honey
Preparation
1. Caramelize the onions
- Heat the butter and olive oil in a pan over medium heat.
- Add the onions with a pinch of salt.
- Cook for 15 to 20 minutes, stirring regularly.
- Add the brown sugar, smoked paprika, chili flakes, and cayenne pepper.
- Pour in the balsamic vinegar and cook for another 2 to 3 minutes, until the onions are soft and caramelized.
2. Prepare the sauce
- Mix all the ingredients together in a small bowl.
3. Cook the burgers
- Season the patties with salt and pepper.
- Cook for 3 to 4 minutes on each side (depending on desired doneness).
- Add the cheddar during the last minute of cooking and cover to allow it to melt.
4. Assemble the burgers
- Lightly toast the buns.
- Spread the sauce on both sides of the bun.
- Add the lettuce, burger patty, a generous portion of caramelized onions, and tomatoes if desired.
- Close the burger and serve immediately.
